Green rooibos tea is obtained from the same shrubby South African plant that all other rooibos teas come from. The difference between them is in the level of fermentation. While other varieties of rooibos are exposed to oxidation, green rooibos tea undergoes a drying process right after harvesting that inhibits oxidation and reduces bitter tannins while preserving antioxidants. The result is a bold tasting tea that is naturally sweet and smooth whether served hot or cold.
